Chef Peter Stremaier
has been with the Aktivhotel Pöder from his very first
beginngs. He started as a prfessional cook trainee
and developed his abilites working abroad. For more
then 10 years, Peter has been working in our hotel
and created many new dishes.
Tomato mousse with estragon sauce
(for 4 People)
Tomato mousse:
500 g tomatoes ?
50 g butter
2 El. Estragon vinegar?
1 El. Estragon leaves ?
salt
pepper
sugar
100 g gelatine?
1/4 l whipped cream
Estragon sauce:
100 g Creme fraiche
50 g Yogurt
1 spoon minced estragon
lemon juice
mustard
salt
pepper
wash the tomatoes and cook them with butter,
salt, pepper and sugar
add estragon and vinegar
add gelatine… mix it well and pass
it through a strainer
after 5 minutes add whipped cream and
fill it in some glasses or forms
mix all the ingredients and stir well
